Lemon Ricotta Waffles are what breakfast dreams are made of. These waffles are not only fluffy and tender, but they also have a refreshing lemony zing.
The not-so-secret ingredient in these waffles is ricotta cheese. Ricotta is a soft, creamy cheese commonly used in Italian cuisine. When added to the batter, it creates a light and airy texture that will make your waffles extra fluffy.
To make these waffles, you’ll need some basic ingredients such as all-purpose flour, baking powder, baking soda, salt, granulated sugar, unsalted butter, whole milk, eggs, vanilla extract, lemon juice, and zest of one lemon. The fresh lemon juice and zest give the waffles a bright and tangy flavor that complements the ricotta perfectly.
To start, mix together the dry ingredients in a bowl. In another bowl, whisk together the melted butter, milk, ricotta cheese, eggs, vanilla extract, lemon juice, and zest. Combine the wet and dry ingredients until just mixed. Be careful not to overmix the batter, as this can make the waffles tough.
Preheat your waffle iron and pour the batter into the wells, cooking until golden brown. Serve the waffles hot with your favorite toppings such as whipped cream, fresh berries, or maple syrup.
Not only are these Lemon Ricotta Waffles delicious, but they’re also a great source of protein and carbohydrates to give you the energy you need to start your day. Plus, they’re easy to make and can be whipped up in no time, making them perfect for a weekend brunch or a quick weekday breakfast.

1½ cups all-purpose flour
2 tsp baking powder
½ tsp baking soda
½ tsp salt
3 tbsp granulated sugar
1 tbsp fresh lemon zest
⅓ cup unsalted butter, melted
2 large eggs
1 tsp pure vanilla extract
3 tbsp fresh lemon juice
½ cup ricotta cheese
¾ cup milk
Directions
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt and set aside.
- Rub granulated sugar and lemon zest in a small bowl until the sugar is scented with lemon.
- Add the lemon sugar to the bowl with the dry ingredients and whisk together.
- In a bowl or large measuring cup, whisk together butter, eggs, vanilla, lemon juice, ricotta, and milk.
- Add the wet ingredients all at once to the dry ingredients and stir to combine. Do not over-mix the batter. A few lumps remaining is fine.
- Preheat your waffle iron and pour the batter into the wells. Dollop ¼ cup of batter into the waffle iron and cook until golden brown. You may need to spoon it in. The batter will be thick.
- Serve the waffles hot with your favorite toppings such as whipped cream, fresh berries, or maple syrup.
- These waffles can also be individually wrapped and frozen. They are great heated up in the toaster or in the oven
Notes
- If using a standing waffle iron or one that you have to pour the batter into, you may have to thin out the batter a little by adding milk or water one tbsp at a time until you get a pourable consistency.
